Norwegian Mørkaker
This recipe for Shortbread Cookies - Norwegian Mørkaker is another great traditional recipe from Norway that my sister-in-law, Hjalma has given me.
Hjalma bakes the best cookies. This week she is visiting my daughter and they will be baking a bunch of traditional Norwegian Christmas cookies - hope I will get to taste a few.

Norwegian Shortbread Cookies
Mørkaker, in Norwegian
Preheat oven 375°F.
Bake time: 10 minutes
Ingredients
1/2 pound (2 sticks) butter
2/3 cup sugar
2-1/2 cups flour
Preparation
Blend soften butter and sugar until white and creamy.
Add flour gradually until well blended.
Keep butter at room temperature an hour before baking, it will be a lot easier to completely mix and work with.
First, chill the dough and then place it on wax paper and form a 2" roll.
Place the dough into the fridge to complete cooling. It will be much easier to cut when the dough is completely cold.
Sprinkle cinnamon and sugar on all sides of dough roll.
Cut into 1" slices and place on cookie sheets. Bake at 375°F. for 10 minutes.
Place the cookies on cooling racks to completely cool the cookies before placing them in an air-tight cookie tin.
I usually double or triple this recipe, grandma, bestemor, in Norwegian can't have too many Norwegian mørkaker, that's according to my grandson, 8 years old. He called me a while ago and invited me to come and visit, he said: "OH, and make sure you bring cookies".
The Norwegian shortbread cookies can be frozen.
